Baked-On Grease on the Outside of a Pan: How to Get It Off
That brown, slightly tacky layer is oil that has been heated over and over until it turned into a varnish. It is no longer grease, so degreasers barely help. A thick baking soda paste left in contact with it for 20 to 30 minutes loosens it enough to wipe away with a soft sponge.

- Mix baking soda with a little water into a thick paste, about three parts powder to one part water, and add a drop of dish soap.
- Spread it over the greasy areas in a visible layer, not a thin smear.

Step by step
1. Warm the pan slightly, then let it cool to hand temperature
A pan that is barely warm releases the film faster than a cold one, because gentle heat softens the hardened oil. Do not apply paste to a hot pan. It dries into powder instantly and does nothing.
2. Mix a paste thick enough to hold its shape
Runny paste slides off the curved sides of the pan and never stays in contact with the grease. Aim for the texture of toothpaste. The drop of dish soap helps the paste wet the greasy surface instead of beading on it.
3. Coat the outside in a visible layer and cover it
Pay attention to the ring where the base meets the sides and the area around the handle rivets, which collect the most buildup. Laying a damp paper towel over the paste keeps it moist, and dry paste stops working.
4. Wait 20 to 30 minutes without touching it
This is the part people skip. Baking soda is a mild alkali and it needs contact time to break down hardened oil. Scrubbing at five minutes just moves paste around and tempts you into using something abrasive.
5. Wipe with a soft sponge in small circles
Work one small area at a time and rinse the sponge often, because the loosened film redeposits if you keep smearing it. If a patch resists, leave it and give that spot a second round of paste rather than reaching for steel wool.
6. Rinse thoroughly and dry completely
Baking soda residue left in the seam around the rivets dries to a white crust and looks worse than the grease did. Rinse with warm water, then dry with a towel rather than air drying, especially on cast iron.
7. Handle the material-specific finish
Stainless can take a light polish afterwards, cast iron needs a thin coat of oil re-applied, and nonstick needs nothing beyond a rinse. Matching this last step to the pan material is what keeps the cleaning from causing its own damage.
Safety notes
- Never mix chlorine bleach with vinegar, citric acid, or any acidic descaler. The combination releases toxic chlorine gas. Bleach has no useful role in cleaning cookware exteriors anyway.
- Baking soda can darken or dull bare aluminum. If the pan exterior is uncoated aluminum, test a small spot near the handle first and keep contact time short.
- Do not use oven cleaner on nonstick, anodized aluminum, or coated exteriors. Those products are strongly caustic and can strip the finish permanently.
- Never try to burn grease off by leaving the pan on a lit burner. It smokes heavily, can ignite, and hardens the remaining film further.
- Skip steel wool and metal scouring pads. The scratches they leave hold oil better than the smooth surface did, so the problem returns faster.
- For electric skillets and any pan with a detachable power unit, do not immerse the base and check the manufacturer instructions before cleaning around the connector.
Never mix different types of cleaning products. Chlorine bleach combined with acidic cleaners releases toxic gas. Always follow the instructions on the product label.

Nonstick pans
Only the exterior gets the paste treatment. Keep it off the cooking surface, use a soft sponge with no abrasive side, and never let a plastic scraper touch the coating. If the coating inside is already flaking, cleaning the outside is not the issue anymore.
Stainless steel
Stainless tolerates the most pressure of the three. After the paste round, a mildly abrasive stainless cleanser removes what is left, applied in the direction of the brushed grain. Rinse fully so no cleanser dries in the rivet seams.
Cast iron
The dark layer on cast iron is not always dirt. Smooth, even black is seasoning and should stay. Only remove buildup that is lumpy, sticky, or flaking. Keep the paste time short, rinse fast, dry on low heat, then wipe a very thin film of cooking oil over the whole pan so it does not rust.
Buildup that has been there for years
A thick, crusty shell will not come off in one session. Expect three or four rounds spread over a few days, and accept that some staining on the base is cosmetic and permanent. Judge the pan by whether it cooks well, not by the underside.
Why it happens
- Cooking oil that gets heated repeatedly undergoes polymerization. The molecules link into a hard, varnish-like film that is chemically different from the oil you poured in, which is why degreasers designed for fresh grease do so little.
- Oil splatters over the rim and runs down the outside, where nobody wipes it. The next time the burner comes on, that thin coat bakes onto the metal.
- Each cooking session adds another layer. The buildup is not one deposit but dozens stacked over months, which is why it takes repeated treatments to remove.
- The underside sits closest to the flame or element, so it gets the most heat and the most stubborn film. Handle rivets and the base rim collect it because liquid pools there.
Keeping it from coming back
- Wipe the outside of the pan with a paper towel while it is still warm after cooking. Fresh splatter comes off in seconds and never gets a chance to bake on.
- Use a splatter screen when frying. Most of the film on the sides started as airborne droplets.
- Do not overfill with oil. Oil that reaches within a couple of centimeters of the rim will creep over it.
- Turn the pan over when you wash it and glance at the base. Catching the film while it is still light is far easier than removing it later.
- Cook at moderate heat where the recipe allows. Very high heat is what turns splattered oil into varnish fastest.
- Store pans dry and stacked with a cloth or liner between them so residue on one base does not transfer to the pan below.
